Awesome 10 minute Hipster Steel-cut Oats

Tasty Hipster Oatmeal

On a chilly winter’s morning, we all need some encouragement to get us out of bed; sometimes coffee alone is simply not enough to motivate action. Oatmeal has long been a favourite lure of Ursula’s; Troy recently watched Pressureluck Jeffrey’s Steel-cut Oats Youtube video, and felt inspired to make this breakfast a reason to get out of bed. Jeffrey knows his pressure cooker food, so this recipe really didn’t need any alterations - we just added the condensed milk to make it a little more creamy, nutmeg to warm, and specified almond milk as the milk component, as we felt it complimented the other ingredients nicely. We were both enamoured with the results!

This updated breakfast classic is gently sweet and creamy, with just the right amount of whole-grain tooth to it, and a nice hint of zing from the apples and cranberries. Ursula believes it deserves the “Hipster” moniker for the almond milk, cranberry, cinnamon, maple syrup and apple additions.

 

Ingredients

  • ½ cup steel cut oats (not quick oats or rolled oats; Aussies and other non-Americans can buy steel-cut oats from some health foods stores or order them online from iHerb)

  • 2 cups water (we use filtered tap water)

  • 1 tbsp quality honey (don’t use the cheap kind with added sugar syrup)

  • 1 pinch of salt

  • Get your Hipster on:

  • A generous handful or two of dried cranberries (to taste; reserve a few per serve if you want to do some fancy presentation)

  • 1 Apple, peeled, cored and cubed (we used golden delicious)

  • 1 cup almond milk

  • A generous “slurp” of maple syrup

  • 1-2 teaspoons vanilla essence (we use Simply Organic, Madagascar Pure Vanilla Extract)

  • A dash of cinnamon (to taste)

  • A conservative sprinkle of ground nutmeg

  • 1 “slurp” of condensed milk per bowl

Directions

  1. Put the steel-cut oats, apple and Pinch of salt in the pressure cooker

  2. Pour in the water and the almond milk, stir to combine and distribute the oats and apples evenly in the pot

  3. Seal your pressure cooker and put it onto manual pressure cooking mode (“Manual > Quick Cooking” on the Tefal Cook4Me)

  4. Set the cooking time to 8 minutes and start the cooking cycle. The pressure cooker will take a few minutes to come up to steam before it starts cooking.

  5. After the 8 minute cycle is complete, quick release the steam if your cooker doesn’t do this by itself.

  6. Engage the “keep warm” function if your cooker doesn’t do this automatically

  7. Add the honey, maple syrup, cinnamon, nutmeg, and stir in well

  8. Add the cranberries and fold through gently

  9. Allow the oatmeal to sit for a few minutes (lid closed) to thicken; check and stir occasionally

  10. Serve in bowls; garnish with a slurp of condensed milk (optional), a few cranberries, and a dusting of cinnamon. This goes beautifully with a Pumpkin Spice coffee or Chai latte. Guten Appetit!

Tip - don’t use a dairy milk in the pressure cooker, dairy milk can burn onto the bottom of the pot.
